GF Pumpkin Spice Snack Bites

Feeling snackish? Well, I’ve got the perfect GF snack that’ll give you some energy.

Pumpkin spice isn’t out the door just yet and these are great for using up any leftover pumpkin puree you may have. They’re super quick and easy to whip up too!

I love having these on hand when I need something to hold me over. And because they have chia seeds* in them, they’re great for boost of energy. They’re also easy to transport for those on-the-go days.

* Chia seeds are full of fiber and omega 3s. They also have a slow conversion time meaning that they will keep you full longer.

Let’s get rolling!


Pumpkin Bites:

  • 1 cup pumpkin puree
  • 1/2 cup of coconut flour
  • 1/4 cup of oat flour
  • 1/4 cup of chia seeds
  • 6 medjool dates
  • 2 tbsp of coconut oil
  • 2 tsp of vanilla
  • 1 tsp of cinnamon
  • 1/2 tsp of ginger
  • Pinch of nutmeg

Here are some ideas for what to roll your snack bites in.

  • Cocoa powder
  • Cocoa nibs
  • Chia seeds
  • Pumpkin seeds
  • Coconut flakes
  • Chocolate chips
  • Granola
  • Crushed nuts

Make sure dates are de-pitted and then puree them in a food processor with the pumpkin, coconut oil, and vanilla. Place ingredients into a bowl once pureed.

Combine the rest of the ingredients together in a separate bowl. Add the dry ingredients to the wet just a little at a time until thoroughly combined.

Take about 2 tbsp of the mixture and roll into balls.

(Makes approx. 16)

Once they’re made up, place your topping(s) of choice in a bowl and roll the snack bites in it until completely covered.

For storage, keep them in an air tight container in the fridge.

(Cocoa nibs add a nice crunch to these)


I’m definitely going to be making more snack bites because they’re so convenient to have around!
