Gluten Free Orange Glazed Muffins

Well folks, the leaves are falling and so is the temperature. Summer is slowly leaving and I couldn’t be more excited!

Cooler weather is perfect for all your baking. This is the time of year where I’ll gladly spend hours in the kitchen tweaking recipes and trying them. All the warm spices, like cinnamon, clove, and ginger come out and are now socially acceptable. Though I won’t start the fall season off with Pumpkin Spice, I’ll start you off with a nice citrus muffin for an easier transition for those of you not wanting to let go of summer.

So orange muffins it is!

All I can say is, YUM! They were delicous ( I say were because sadly I ate them all ). They are also super easy to make and don’t contain too many ingredients.



Here’s what you’ll need:


  • 1 1/2 cups of almond flour
  • 1 cup of fresh orange juice (about 2 oranges)
  • 1/3 cup brown rice flour
  • 3/4 cup of coconut sugar
  • 3 eggs
  • 3 tbsp orange zest
  • 2tsp double acting baking powder
  • 2 tsp xanthan gum
  • 1 tsp of almond extract
  • 1/4 tsp salt


  • 1/4 cup of coconut sugar
  • 2 tbsp of orange juice
  • 2-3 drops of orange essential oil

Preheat oven to 350 degrees.

Prep time: 15 minutes

Makes 12 small muffins or 6 large ones

First Step: add about 3 tbsp of zested orange to your bowl and squeeze the juice from the oranges into the bowl ( If you don’t have enough for 1 cup of juice, you can add regualr orange juice or squeeze some more oranges).


Second Step: combine your flours, baking powder, xanthan gum, and salt into a separate bowl and mix together.


Third Step: add your coconut sugar, eggs, and almond extract to your orange mixture. Mix well with a wisk.


Step Four: Slowly add your dry ingredients to your wet mixture 1/2 cup at a time and whisk inbetween. This helps to prevent clumps and creates a smoother batter.


This is what your batter consitency should look like.


Step Five: Pour your batter into a greased muffin tin. You can fill each one almost to the top.

Now you can pop these muffins into your preheated oven for 30 minutes or until they are golden brown and the middles are dry ( you can use a tooth pick to see if they are done in the middle, basic stuff…I know, but I gotta tell you anyways ).


Alrighty, you’ve got your muffins in the oven, so instead of twiddling your thumbs you can make your glaze.

Simply combine the ingredients for the glaze and just set it aside till the muffins are done. It’s pretty easy, I know.

Once the muffins are done, use a spoon to pour the glaze over each muffin. Let them cool for 10 minutes.

Now you can officially enjoy these delicous treats.

You can cover them and store on the counter or place them in the fridge for a longer life. ( Except I didn’t give my muffins a chance as they were gone in three days ).
